Our client, The Kulcha House Pty Ltd, operates The Kulcha House, a dine-in Indian restaurant in Liverpool specialising in freshly prepared kulchas, tandoori breads, regional curries, biryani and other authentic Indian dishes. The restaurant prepares food to order and serves customers from an à la carte menu.

The Kulcha House Pty Ltd is seeking an experienced and reliable Cook to join its kitchen team. The Cook will be responsible for preparing, cooking and presenting menu items in accordance with the restaurant's recipes, portion requirements and quality standards. The role will have particular responsibility for the tandoor and curry sections during service, ensuring food is correctly cooked, consistently seasoned and served within required timeframes.

The Cook will also support the kitchen's day-to-day operations by maintaining food safety and hygiene standards, managing ingredients appropriately and assisting junior kitchen staff during busy service periods.

In this role your main responsibilities include:

  • Prepare, cook and present Indian dishes including curries, tandoori meats, biryani, kulchas and naan in accordance with established recipes and standards.
  • Prepare marinades, spice mixes, sauces and other ingredients required for daily kitchen operations.
  • Operate and monitor tandoors, ovens, grills, fryers, burners and other commercial cooking equipment, maintaining appropriate cooking temperatures.
  • Check the quality and freshness of meat, seafood, vegetables, dairy products, spices and other ingredients before preparation and use.
  • Season and adjust dishes during cooking to maintain the required flavour, consistency and presentation.
  • Portion, plate and garnish meals accurately for dine-in table service, particularly during peak service periods.
  • Prepare and cook meals to accommodate dietary requirements, including vegetarian, vegan and gluten-free options, while following appropriate food handling procedures.
  • Store ingredients appropriately in cool rooms, freezers and dry storage areas, including labelling, dating and rotating stock to maintain food quality and minimise wastage.
  • Maintain clean, safe and hygienic cooking, preparation and storage areas in accordance with food safety and workplace health and safety requirements.
  • Assist with estimating daily ingredient requirements, monitoring stock levels and communicating replenishment requirements to the senior kitchen team.
  • Assist with the preparation of daily specials and other menu items as directed by the Chef or kitchen management.
  • Work cooperatively with Chefs, kitchen hands and junior kitchen staff to maintain an organised and efficient kitchen during service.
  • Guide and assist junior kitchen staff and kitchen hands with food preparation and cooking tasks as required.

The successful candidate will have practical commercial cooking experience and the ability to consistently prepare Indian cuisine in a busy restaurant environment.

Other key skills and experience will include:

  • Certificate IV in Commercial Cookery, or Certificate III in Commercial Cookery with at least two years of on-the-job training; candidates with at least three years of relevant commercial cooking experience may also be considered in place of a formal qualification.
  • At least one-year relevant experience in a commercial kitchen, preferably with demonstrated experience preparing Indian cuisine.
  • Practical experience operating a tandoor and preparing tandoori meats, breads and related dishes will be highly regarded.
  • Ability to maintain consistency in flavour, portion size, cooking temperature and presentation.
  • Good communication and teamwork skills, with the ability to work effectively with Chefs and other kitchen staff.
  • Reliability and flexibility to work evenings, weekends and public holidays as required by the roster.
