We take pride in creating authentic Italian flavours that evoke the warmth and simplicity of cooking with Nonna. We seek a full-time Chef with demonstrated experience in traditional Italian cuisine. Job Summary As a Chef, you will prepare, cook and present dishes from our a la carte menu, working closely with the senior chef and kitchen team. You will organise daily food preparation, coordinate cooking during service, monitor dish quality and provide practical guidance to Cooks and junior kitchen staff. This is a hands-on role requiring strong experience in traditional Italian cuisine, including pasta preparation, pizza, and pan and grill work, with a focus on food quality, hygiene, safety and presentation. Duties include: o Plan and organise daily food preparation and cooking in consultation with the senior chef, having regard to menu requirements, bookings and expected demand. o Prepare, cook and present a range of a la carte dishes, including traditional Italian hand stretched pizza, fresh pasta, meat and vegetable dishes. o Coordinate the sequence and timing of cooking with the senior chef and kitchen team to support efficient and timely service. o Monitor the quality of dishes at all stages of preparation and presentation and correct any inconsistency before service. o Prepare special dietary meals and customised dishes as required. o Contribute to menu development, recipe refinement and improvements in taste, portioning, quality and presentation. o Prepare authentic Italian menu items, including dishes for private and corporate events. o Estimate food and ingredient requirements and advise the senior chef of ordering and replenishment needs. o Assist with receiving, storage and rotation of stock and minimise wastage through portion control and proper storage. o Demonstrate cooking techniques and provide practical guidance to Cooks and junior kitchen staff. o Follow occupational health and safety, food safety and hygiene requirements, keep kitchen equipment clean and in good working order, and report faults or repair needs to the senior chef.

Essential Skills and Qualifications: o Relevant trade-level qualification in Commercial Cookery. o At least three years of recent experience preparing traditional and authentic Italian cuisine. o Demonstrated ability to make pasta and pizza dough from scratch. o Demonstrated ability to organise food preparation and coordinate cooking during service, working closely with the senior chef and kitchen team.
