Our client, IM.OZ International Pty Ltd trading as Delhi Rocks, is a well-established Indian restaurant located in the heart of Melbourne CBD. Since 2007, Delhi Rocks has been serving authentic home-style Indian cuisine, offering customers a diverse range of traditional dishes inspired by the rich culinary heritage of India. The restaurant provides dine-in, takeaway, delivery and catering services and is renowned for its curries, biryanis, tandoori specialties, Punjabi favourites, Indian street food and freshly prepared breads.

Delhi Rocks is seeking a passionate and qualified Chef to join its highly skilled and supportive kitchen team. The successful candidate will play a key role in managing kitchen operations and ensuring the consistent preparation and presentation of high-quality Indian cuisine that reflects the restaurant's commitment to authentic flavours, fresh ingredients and exceptional customer experiences.

You should have a passion for Indian cooking and a strong understanding of kitchen operations, food safety, inventory management and staff supervision. The successful candidate will ensure that all menu items are prepared efficiently and consistently while maintaining the highest standards of quality, taste and presentation.

Qualifications and Experience

  • Must have at least one year of relevant experience as a Chef.
  • Must hold a minimum Certificate IV or Diploma qualification in Hospitality, Commercial Cookery or a related field.

In this role, your main responsibilities include:

  • Preparing and cooking a wide range of authentic Indian dishes
  • Operating and maintaining tandoor ovens and other commercial kitchen equipment while ensuring proper cooking temperatures, food quality and safety standards.
  • Developing, reviewing and standardising recipes to maintain consistency in flavour, presentation and portion control across all menu items.
  • Preparing and marinating meats, poultry, seafood and vegetables using traditional Indian herbs, spices and cooking techniques.
  • Planning menus and contributing innovative ideas for seasonal specials and new dishes while maintaining the authenticity of Indian cuisine.
  • Managing food preparation for dine-in, takeaway, delivery and catering orders while ensuring timely service during peak trading periods.
  • Monitoring stock levels, ordering ingredients and maintaining inventory records to minimise waste and control food costs.
  • Supervising and training cooks and kitchen assistants in food preparation techniques, plating standards, portion control and kitchen procedures.
  • Ensuring compliance with food safety regulations, HACCP requirements, workplace health and safety policies and hygiene standards.
  • Maintaining cleanliness and organisation of kitchen workstations, storage areas, cool rooms and equipment.
  • Accommodating customer dietary requirements by adapting menu items for vegetarian, vegan, gluten-free and allergy-sensitive requests.
  • Assisting management with rostering, kitchen coordination and workflow planning to ensure efficient kitchen operations.

Skills

The successful candidate will possess:

  • Outstanding culinary knowledge and a genuine passion for authentic Indian cuisine.
  • Strong knowledge of traditional Indian spices, ingredients and cooking methods.
  • Experience in menu planning, recipe development and food presentation.
  • Sound knowledge of stock control, food costing and inventory management.
  • Understanding of nutritional requirements, allergens and dietary modifications.
  • Comprehensive knowledge of food safety, WHS and HACCP principles.
  • Ability to work effectively under pressure in a fast-paced commercial kitchen environment.
