Our client, KFK IT Solution Pty Ltd trading as Diwan E Khas Restaurant, operates a halal Pakistani and Indian restaurant in St Marys, NSW. The restaurant provides dine-in, takeaway, delivery and catering services and offers a range of Pakistani and Indian dishes including biryanis, curries, charcoal BBQ and other traditional menu items.
The client is seeking a passionate and qualified Chef to join its highly skilled and supportive kitchen team. The successful candidate will be responsible for assisting management in all aspects of kitchen operations to ensure the consistent delivery of high-quality dishes in line with Diwan E Khas’ vision, culinary standards, and business objectives.
You should have a passion for cooking and a strong understanding of kitchen operations, including food safety, kitchen equipment and staff management. Chef will ensure each menu item is prepared on time and meet the presentation style and quality standard required.
Qualifications and Experience
In this role your main responsibilities include:
Prepare authentic Indian & Pakistani dishes – including biryanis, curries (e.g., chicken tikka masala, nihari, karahi), kebabs, tandoori items, and breads (naan, roti).
Operate and maintain tandoor ovens – ensuring proper temperature, timing, and traditional techniques for clay-oven cooking.
Develop and standardize regional recipes
Manage halal meat preparation – including marination, portioning, and cooking while respecting halal guidelines.
Control portion costs & kitchen inventory – minimizing waste, tracking spice usage, and ordering seasonal produce
Lead a team of commis & assistant cooks – training them in layering of spices (tadka), simmering techniques (dum), and proper plating for buffets and à la carte.
Ensure allergen & dietary adaptations – modifying dishes for gluten-free, vegan, or nut-allergy requests.
Maintain hygiene & food standards – implementing proper cooling, storage, and labeling for large-batch curries and pickles.
Skills
The successful candidate will possess:
Display outstanding culinary knowledge and passion for food
Knowledge of stock control
Knowledge of Nutritional and Allergy requirement
Full understanding of food controls
Understanding food safety, WHS and HACCP principles
