Butcher or Smallgoods Maker

Rocky Creek Abattoir – Tolga, QLD Full-time Salary: $72,000–$80,000 per annum + superannuation

Rocky Creek Abattoir is seeking an experienced Butcher or Smallgoods Maker to join our processing team in Tolga, Far North Queensland. The successful applicant will undertake skilled meat processing duties including boning, trimming, cutting and portioning meat to required specifications while maintaining high standards of food safety, product quality and workplace safety.

Key responsibilities include:
• Boning, cutting, trimming and portioning meat
• Preparing meat cuts to required production and customer specifications
• Using knives, saws and meat processing equipment safely and efficiently
• Monitoring meat quality and identifying products that do not meet required specifications
• Maintaining portion control and minimising product waste
• Packaging and labelling meat products as required
• Maintaining high standards of hygiene and sanitation
• Complying with HACCP, food safety and quality assurance requirements
• Following production procedures and workplace safety requirements
• Maintaining a clean and safe processing environment

Skills and experience:
• Recent experience in a commercial butchery, abattoir or meat processing environment
• Demonstrated boning, trimming, cutting and portioning skills
• Strong knife-handling skills
• Knowledge of meat cuts and product specifications
• Understanding of food safety, hygiene and meat handling requirements
• Ability to work effectively as part of a production team

Essential requirements:
• Relevant trade qualification in butchery/meat processing or equivalent industry experience demonstrating the skills required to perform the role The position involves repetitive manual handling, knife work, standing for extended periods and working in a cold processing environment. Willingness to undertake Q fever vaccination is required.
